Traditional Mustard Oil Tempering for Dal & Vegetables

A good tadka (tempering) is what turns simple dal or vegetables into something you remember. Traditional wood-pressed mustard oil, with its sharp aroma and pungency, is the backbone of Odia and Bengali cooking — here’s how to use it right.

Ingredients

  • 2-3 tbsp Pure Village Hub Cold Pressed Mustard Oil
  • 1 tsp panch phoron (five-spice blend) or plain cumin/mustard seeds
  • 2 dried red chillies
  • 1 sprig curry leaves (optional)
  • A pinch of hing (asafoetida)

Method

  1. Heat the mustard oil in a pan until it just reaches smoking point, then let it cool for 10-15 seconds — this mellows the raw pungency while keeping the aroma.
  2. Add the panch phoron/cumin seeds and let them crackle for a few seconds.
  3. Add the dried red chillies and curry leaves, and a pinch of hing.
  4. Pour this tempering directly over cooked dal, sautéed greens, or vegetables just before serving.

Why Cold-Pressed Oil Matters Here

Refined mustard oil is deodorized and loses much of its characteristic sharpness. A wood-pressed (Kachi Ghani) oil like ours retains that pungency, which is exactly what gives a proper tadka its punch.
